Ingredients

Baguette Toasts:

  • 1 multi-grain baguette sliced into 1/4 inch slices (about 36 slices)

Tomato Basil Topping:

  • 1 large tomato seeded and chopped
  • 1 garlic clove minced
  • 1/4 medium red onion chopped
  • 1/4 cup chopped fresh basil
  • 1 tsp dried oregano
  • 1 Tbsp balsamic vinegar

Kalamata Olive Topping:

  • 1/4 cup Kalamata olives chopped
  • 1/2 cup roasted red pepper chopped
  • 1/4 cup feta cheese
  • 1 tsp olive oil
  • 1 Tbsp red wine vinegar
  • Black pepper to taste

Pistachio Topping:

  • 1/3 cup pistachio nut
  • 1/2 cup chopped fresh cilantro
  • 2 Tbsp lemon juice
  • 1 Tbsp zesty low-fat Italian dressing
  • Black pepper to taste

Preparation

Baguette Toasts:

Preheat oven to 350°.

Arrange baguette slices on 2 baking sheets. Lightly coat baguette slices with nonstick cooking spray. Toast baguette slices in oven for about 5 minutes, or until lightly browned. Remove from oven and set aside.
Arrange baguette toasts on a platter. Each topping will make enough for about 8 toasted baguette slices.

Tomato Basil Topping:

In a bowl, mix together Tomato Basil topping ingredients. Spoon topping on top of toasted baguette slices.

Kalamata Olive Topping:

In a bowl, mix together Kalamata Olive topping ingredients. Spoon topping on top of toasted baguette slices.

Pistachio Topping:

In a bowl, mix together Pistachio topping ingredients. Spoon topping on top of toasted baguette slices.

Yield: 12 servings
