Ingredients

  • 2 Large White Potatoes
  • ½ cup Swiss Cheese, shredded
  • 6 Eggs
  • Salt
  • Pepper

These ingredients are regularly available at the Food FARMacy, free of charge for those eligible.

Preparation

  1. Use a fork to poke holes in both potatoes.
  2. Roast potatoes on a baking pan for 25 minutes at 400 degrees.
  3. Let potatoes cool then peel off the skin.
  4. Divide potatoes into 6 spots of a muffin pan.
  5. Cook in the oven at 400° for 15 minutes or until browned.  Spray with cooking spray to help brown the top.
  6. Once brown, crack an egg into each and sprinkle the Swiss cheese on top.  Cook for 5-10 minutes depending on the desired doneness.
  7. Season with salt and pepper and enjoy!
