Mercy Hospital Chef Christopher Damiani and guest host Holistic Health Coach Karen Calandra, RN, created a healthy Power Wrap and Mango Yogurt Parfait for our Cooking Well at Mercy show at the Mercy Café on the hospital’s 3rd floor.

Power Wrap and Mango Yogurt Parfait Ingredients

Ingredients for Power Wrap

2 tbl. Ranch Herb Dressing
4 oz. Spinach
2 oz. Red pepper
1 oz. Shredded carrots
4 oz. Garlic Herbed Chicken
1 oz. Red Quinoa
4 slices Avocado
1 oz. Feta cheese

Ingredients for Mango Yogurt Parfait

1 c. Low-fat Granola (no nut or raisin)
2 oz. Fruit frozen mango
2 scoops Low-fat vanilla yogurt

Power Wrap and Mango Yogurt Parfait Preparation

Power Wrap

  1. Spread 2 tbl. Ranch Herb Dressing over lower two-thirds of tortilla
  2. Layer the following over two-thirds of tortilla:
    • 4 oz. Spinach
    • 2oz. Red pepper
    • 1 oz. Shredded carrots
    • 4 oz. Garlic Herbed Chicken
    • 1 oz. Red Quinoa
    • 4 slices Avocado
    • 1 oz. Feta cheese
  3. Fold lower third of tortilla up over filling
  4. Fold in right and left edges of tortilla about 1” on each side
  5. Roll wrap closed
  6. Place seam side down
  7. Cut diagonally in half

Mango Yogurt Parfait

  1. In a specified 4 oz. clear insert cup, place granola
  2. In a specified 12 oz. clear cup with a flat lid, layer the following:
    • 1 oz. mango
    • scoop yogurt
    • 1 oz. mango
    • scoop yogurt
    • 1 cup granola
  3. Cover and chill
