Cucumber, Blueberry, & Feta Salad
Even if you’re not ready to take the plunge into a diet that’s mostly or all plant-based, we can all benefit our health by eating more plants every day – and this recipe certainly checks that box. Eating plant-based should center around fruits and vegetables, nuts and seeds, whole grains, and legumes.
Studies show that plant-based diets support a lower body mass index (BMI), lower the prevalence of obesity in adults and children, reduce colon cancer risk, and can benefit those with diabetes. They can also lower one’s blood pressure, and may result in lower mortality from ischemic heart disease.
This recipe is an easy and flavorful way to journey into the world of vegetarian eating. If you’re thinking about going vegetarian or vegan, start with one meal or one day of the week. Talk with a Registered Dietitian to ensure you’re getting all the nutrition you need, which can be a concern for anyone limiting entire food groups from their daily diet.
