Cucumber, Blueberry, & Feta Salad
Even if you’re not ready to take the plunge into a diet that’s mostly or all plant-based, we can all benefit our health by eating more plants every day – and this recipe certainly checks that box. Eating plant-based should center around fruits and vegetables, nuts and seeds, whole grains, and legumes.

This recipe is an easy and flavorful way to journey into the world of vegetarian eating. If you’re thinking about going vegetarian or vegan, start with one meal or one day of the week. - 2 seedless cucumbers, peeled, halved lengthwise, seeded, thinly sliced (about 4 cups)
- 2 cups fresh blueberries
- Salt and pepper to taste
- 1/2 cup Wegmans Organic White Balsamic Vinaigrette
- 3 Tbsp thinly sliced fresh mint leaves
- 1 cup Wegmans Crumbled Plain Feta Cheese (Cheese Shop)

Combine cucumbers and blueberries in large bowl. Season with salt and pepper.
Add vinaigrette, mint, and feta; toss gently to combine.
