Stuffed Peppers with Cauliflower “Rice”

Veggies are naturally low in calories and fat, in addition to being a great source of various vitamins, minerals, and fiber. This dish features a variety of veggies, featuring cauliflower rice in place of refined grain rice. Using brown rice is another great alternative to refined grain rice that will provide extra fiber, as well as vitamins and minerals.

Ingredients

  • 1 pkg (6 pk) Wegmans Mixed Sweet Peppers
  • 1 lb Wegmans Cauliflower Rice
  • 1 pkg (7 oz) Wegmans Diced Mirepoix (Produce Dept)
  • 1 pkg (about 1 lb) Wegmans 80/20 Lean Ground Beef
  • 2 Wegmans Large Eggs
  • 1 pkg (.25 oz) Wegmans Italian Parsley, finely chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 jar (24 oz) Italian Classics Organic Passata

Preparation

Preheat oven to 350 degrees. Cut tops of peppers about 1/2-inch from top; discard stems and seeds. Dice reserved tops; add to large bowl. Set aside remaining peppers.

Add cauliflower, mirepoix, beef, eggs, parsley, salt, and pepper to bowl with diced peppers. Mix well to combine.

Fill peppers evenly with veggie-beef mixture. Add sauce to 13×9-inch baking dish; set peppers in dish. Cover with parchment paper and aluminum foil.

Bake about 1 hr 15 min until internal temp of veggie-beef mixture reaches 165 degrees (check by inserting thermometer halfway into center of mixture).
