Stuffed Peppers with Cauliflower “Rice”

Healthy Living, Recipes

It is recommended that adults eat 2 ½- 3 cups of veggies per day. But did you know that only 1 in 10 adults eat this recommended serving…why is that?

Veggies are naturally low in calories and fat, in addition to being a great source of various vitamins, minerals, and fiber. Diets rich in vegetables may help maintain a healthy blood pressure, reduce blood cholesterol levels, lower risk of heart disease, promote a healthy immune system, healthy eyes and skin, along with numerous other health benefits.

This dish features a variety of veggies, featuring cauliflower rice in place of refined grain rice. Using brown rice is another great alternative to refined grain rice that will provide extra fiber, as well as vitamins and minerals.

Serve these stuffed peppers with a colorful side salad to complete the meal and help you reach your veggie goal. This is a nutrient-packed dish that is sure to satisfy.
